1 Rise Rolls
2 1/2 C AP Flour
1/2 TSP Salt
2 TBSP Sugar (could probably use honey)
2 TBSP Olive Oil
1 Envelope Yeast
3/4 C Warm Water
Combine all dry ingredients in bowl of stand mixer with dough hook. Add the oil and the water and mix until combined. Knead on medium speed for 3 minutes. Remove dough from hook, leave in bowl, cover, and let rest for 10 minutes. On a floured surface (or tea towel, that's what I use cause you don't need to flour it) divide dough into 12 balls. Place in greased 9" round baking dish, cover, and let rise in a warm place for 30 minutes. When doubled in size bake at 375 for 11-14 minutes. (I do only 11 minutes as our oven runs a little on the hotter side.)
I have been reading recipes lately for dough that needs only one rise and was instantly intrigued. I found a recipe similar to the above, made some changes and am really happy with the result. The fluffiest, softest rolls ever. Or should I say buns! Soft, fluffy buns! Who doesn't want some of those?
On the Jude front, that silly sweet kid pulled himself up to his knees today! What? I know. And he started sleeping through the night last week and has so far continued to do so. Double I know! I wasn't sure if I was going to announce Jude's sleeping milestone because I know you must be rolling your eyes at me thinking 'if only they tried this'. And it embarrasses me that it took so long. But then I thought, whatevs, we tried everything and were as consistent as humanly possible and in the end, the only thing that has helped Jude has been time. Kid is ready when he's ready. So if you have a bad sleeper just be happy that time never stands still. If we ever have another kid I'm just gonna let it sleep how it wants. Best advice ever.

I am so excited to try ur rolls! I have been through soooo many recipes, and none are just right. Also, Gabe slept through the night the past two nights! I hope this is a new "thing". I woke up in the morning like, whaaaa just happened? Why do I feel weird? AH, IS THE BABY STILL ALIVE!?
