You may or may not know that beans are my favorite food when chocolate is not included in the category. I love beans. I eat them all year round at least 52 times. They are delish.
Here are some of my favorite ways to cook them.
Black Beans a la Patience
2 cans black beans, partially rinsed
1 bushel cilantro, finely chopped
1 can diced tomatoes, drained
juice of 1 lime
4-5 garlic cloves
1/4 red onion, finely chopped
Put it all in a pot, bring to a boil, let simmer. Before serving mush up some of the beans. Great for a burrito bar, or with rice and yam fries. And, black beans are the best kind for you, woot woot!
Jo-Anne Bean Burritos
2 cans kidney beans, DO NOT drain
2-3 TBS cumin
2 TBS grated cheese
Heat beans, then mash. Add cumin and cheese. Serve on tortillas with whatever fixins' you like. Dan likes to butter his tortilla and adds olives, sour cream, and cheese. I like it plain.
Summer Bean Salad
1 can black beans, drained
1 can bean medley, drained
Feta cheese, finely chopped
1 red pepper, finely chopped
1/4 red onion, finely chopped
3-4 TBS of your fav vinegrette dressing (or balsamic vinegar with olive oil)
Place everything in a pretty bowl, mix together well, and let sit in the fridge for a few hours before serving. Goes great with BBQ meats.
